Roasted Potatoes with Rosemary

4 medium potatoes, unpeeled, cut in quarters (or about 2-inch pieces)
2 Tbsp olive oil
3/4 tsp kosher salt
1/2 tsp pepper
1 Tbsp fresh minced garlic
2 Tbsp fresh minced rosemary

Toss all ingredients in a bowl.
Bake at 400 degrees for 1 hour, flipping every 20 minutes.
