Cauliflower and Potato (Aloo Gobi)

2 Tbsp ginger/garlic paste
1 Tbsp ground coriander
1/2 tsp turmeric
1/2 cup water
2 Tbsp oil
1 serrano chili, sliced open
1 tsp cumin seeds
1 cauliflower, in florets
1 potato, peeled and cubed
kosher salt
1/2 cup water

Mix ginger/garlic paste, coriander, turmeric, and 1/2 cup water to make a paste.

Heat oil in frying pan.  Fry chili pepper for 30 seconds.  Add cumin seeds fry until toasted.

Add paste and cook 2 minutes.

Add cauliflower and potatoes.  Stir to coat.

Add salt and 1/2 cup water.  Cover and cook over medium heat 10 minutes.  Uncover and cook about 5 more minutes.  Garnish with cilantro.
