Turkey Meatballs

3 slices thick bread (challah)
1/3 cup water
1 small onion, minced
1 clove garlic, minced
2 Tbsp olive oil
1 egg, beaten
1 lb. ground turkey
2 Tbsp tomato paste
3 Tbsp parsley

1.  Preheat oven to 400 degrees.  Soak bread in water for 5 minutes then squeeze out.

2.  Saute onions and garlic, 1/2 tsp salt, 1/2 tsp pepper in 1 Tbsp oil for 6 minutes.

3.  Mix egg, turkey, 1 Tbsp tomato poste, onions, bread, and parsley.  Form into 12 meatballs and place on baking pan (no rack).

4.  Mix 1 Tbsp tomato paste (maybe a little more) and 1 Tbsp olive oil.  Spread on top and sides of the meatballs.  Bake 25-30 minutes.
