1-1/4 cups packed brown sugar
4 medium (1-1/2 cups) mashed sweet potatoes*
3/4 tsp cinnamon
1/2 tsp salt
1/2 tsp ground ginger
1/4 tsp ground cloves
1/4 tsp ground nutmeg
1 cup evaporated milk
Combine all ingredients except milk and eggs. Beat at medium speed until well mixed. Add milk and eggs. Bean at low speed until well mixed.
Pour filling into uncooked crust. Bake 50-60 minutes until knife comes out clean. Cover crust with foil if getting too brown.
*Cook sweet potatoes with their skin on. Let cool and remove skin.
