Spiced Molasses Cookies

2-1/2 cups almond flour
opt. 1 Tbsp ground flaxseed
1 tsp baking soda
1/4 tsp sea salt
1 Tbsp freshly grated ginger or 2 tsp ground ginger
1-1/2 tsp cinnamon
1/8 tsp each ground cloves, ground nutmeg, and ground cardamom (more to taste)
2 eggs, room temperature
2 Tbsp melted oil (coconut, etc.)
1/3 cup honey
3 Tbsp molasses
raw sugar (optional)

1.  Preheat oven to 350.  Line two baking sheets with parchment.

2.  In a large bowl, whisk almond flour, flaxseed, baking soda, salt, and spices.  In a small bowl, whisk eggs, oil, honey, and molasses.  Add wet ingredients to dry and mix well.

3.  Form 1 Tbsp dough into a ball. Place 2-inches apart on baking sheet.  Gently press down into discs and sprinkle with raw sugar.  Bake 10-12 minutes, until the top begins to crack a little and they are lightly brown.
