Chocolate Chip Cookies (Flourless, dairy-free)

1 1-4 cup almond meal
1/4 cup chopped dark chocolate
1/2 cup shredded unsweetened coconut (or a combo of grated and shredded)
1/2 tsp baking powder
1/4 tsp salt
1/3 cup brown sugar
1 egg
3 Tbsp coconut oil, melted
1/2 tsp vanilla

Stir together the almond meal, chocolate chunks, coconut, baking powder, salt, and sugar.

In a separate bowl, beat the egg well.  Whisk in the coconut oil and vanilla.  Add to dry ingredients and mix until just combined.

Chill in the refrigerator for at least 30 minutes (or overnight).

Shape into 1-inch balls.  Place on baking sheet and flatten slightly.

Bake at 375 degrees for 10 minutes, or until the edges just begin to brown.
