Sweet Potato Casserole

6 medium sweet potatoes
3/4 cup sugar
1 can (20 oz) crushed pineapple
2 eggs, beaten
1 tsp vanilla
1/4 tsp nutmeg
1/2 tsp salt
bag large marshmallows

Place sweet potatoes into a pot and cover with water.  Boil gently until cooked through, about 45 minutes.  Drain, cool.

Peel potatoes.  Mash.  Stir in margarine and sugar until melted.  Add pineapple, eggs, vanilla, nutmeg, and salt.

Spoon into greased 2-qt baking dish.  Cover with marshmallows.  Bake 40 at 350 degrees for 40-45 minutes.
