Healthy Cookies

3 large, ripe bananas
1 tsp vanilla
1/4 cup coconut oil, warmed until liquid
2 cups rolled oats
2/3 cup almond meal
1/3 cup shredded coconut
1/2 tsp cinnamon
1/2 tsp fine sea salt
1 tsp baking powder
6-7 oz chocolate chips or dark chocolate bar

Preheat oven to 375 degrees, rack in the top third.

In large bowl, combine bananas, vanilla, coconut oil.  Set aside.

In another bowl, whisk oats, almond meal, shredded coconut, cinnamon, salt, and baking powder.  Add to wet ingredients and stir until combined.

Fold in chocolate chips.

Drop 2 tsp dollops of dough about an inch apart on baking sheet.  Bake 14 minutes.

Makes 3 dozen bite-sized cookies
