Mango Tilapia

Marinade
4 serrano chiles, seeded
3 garlic cloves, peeled
2 large shallots, peeled
2 cups chopped peeled mango
1/3 cup cider vinegar
1/4 cup fresh orange juice
1 tablespoon chopped fresh thyme
2 teaspoons olive oil
1/4 teaspoon salt

4 (6-ounce) tilapia fillets

Blend first 3 ingredients. Add remaining ingredients and blend until smooth. Place mango mixture and fish in a zip-top plastic bag, seal and marinate in refrigerator 20 minutes.

Place fish on a grill rack or broiler pan coated with cooking spray. Cook 4 minutes on each side or until fish flakes easily when tested with a fork or until desired degree of doneness.  Or, cook in a pot 20 minutes with marinade.  Remove pieces from pot, and top with mango salsa.

Salsa
1 mango - peeled, seeded and diced
1 cup chopped fresh pineapple
1/2 red bell pepper, seared and chopped      
1/2 red onion, finely chopped
3 tablespoons chopped fresh cilantro
3 tablespoons fresh lime juice
chopped peppers
brown sugar
