Jerk Chicken


1/2 cup sliced scallions
1/2 cup chopped shallots
1 Tbsp brown sugar
4 Tbsp fresh lime juice
3 Tbsp olive oil
1/2 tsp allspice
5 garlic cloves (or preferably paste)
1 small serrano chili, stemmed
8 bone-in chicken thighs, skinned
1/4 tsp salt

1. Preheat grill to med-high.

2. Combine the scallions, shallots, sugar, lime juice, olive oil, allspice, garlic, and serrano in blender.  Blend until smooth.

3. Use half sauce to marinade chicken.  Sprinkle with salt.

4. Grill chicken 5 minutes on each side.  Turn heat to low and grill 5 more minutes on each side, or until done.  Brush chicken with remaining sauce.
