2 lbs. leeks
1/4 cup oil
3/4 cup chopped onion
1 clove garlic, minced
1/2 lb. ground beef
1 cup beef stock
1 Tbsp tomato sauce
1 red bell pepper
salt
pepper
opt. mashed potatoes
1. Preheat oven to 375 degrees.
2. Cut off the green leaves from the leeks. Wash and cut the leeks slantwise into 1-inch thick slices. Sauté in 2 Tbsp oil and place in baking pan.
3. Sauté onion and ground beef in remaining oil. Add beef stock, tomato sauce, red pepper, salt, and pepper. Boil. Add a little flour to thicken if desired. Pour over leeks.
4. Bake for 1 hour. Serve hot over mashed potatoes.
